Here is a recipe for our favorite fudgy, intense chocolate brownie. It is gluten and dairy free and crazy delicious. It is as easy to make as it is addictive.
Ingredients:
Brownie:
- 100 g dark chocolate
- 100 g coconut oil
- 100g almond flour
- 3 eggs
- 100 g coconut sugar
- 100 g mashed dates (preferably medjool)
- ½ tsp salt
- 1 dl of strong coffee
- 3 tbsp cocoa powder
- 70 g nuts(whatever you prefer – we use walnuts)
Chocolate Ganache:
- 60 g dark chocolate
- 1 dl coconut cream
Directions
- Preheat oven to 175 C or 350 F
- Melt chocolate and coconut oil together in a bowl
- Combine your eggs and cocnut sugar in another bowl and whisk well
- Add almond flour and mashed dates
- Mix salt, coffee and cocoa powder with the melted chocolate mixture
- Mixed the two bowls gently together and add your favorite nuts
- Lightly grease a baking pan and line it with baking paper
- Pour the mixture in the pan and bake it for 20-30 minutes until golden
- Let it cool (this is the hard part 😉 )
- While your cake is cooling prepare your ganache by melting the chocolate together with coconut cream until it has the right creamy texture
- Put your ganache on top of your cooled brownie
- ENJOY
For a Vegan alternative you can easily swap the eggs with chia-eggs. Simply soak 3 tbsp of chia seeds in 6 tbsp of water in 10 minutes.
