Bone broth is a protein-rich liquid obtained by simmering animal joints and bones in water. Much like stock, it can be used as a base for soups, stews and risottos. In general, bone broth is very nutritious.

Bone broth is associated with collagen, a structural protein found in skin, cartilage and bone. When boiled, the collagen in connective tissue is broken down into gelatine.
